Overview

The Anso Santoku TAD Edition knives are handmade tools from Ansø of Denmark. Drawing influence from unique elements of Danish design and Japanese heritage,  these knives will age beautifully, growing alongside their owner throughout a lifetime of use. Whether you’re a professional chef or a passionate home cook who enjoys precision and quality, each knife will invite you to express your gastronomic creativity. 

The blade is forged in Japan. This process includes the forging of 33 layers of San Mai Steel, giving the blade its unique patterned look, incredible strength, and an amazingly resilient edge.

The handle is made from either natural micarta or bog oak. Chosen for their durability, these materials  will only become more beautiful over time and with use.

The wood is treated with a special sealing method to make sure that it remains both beautiful and robust throughout its lifetime. 

Please note that since we use natural materials for the handles each knife will vary in looks.

 

The NORD Series Anso Santoku knives are completely handmade. Throughout their construction, skilled hands adjust each detail, ensuring that every knife is perfect and, moreover a pleasure to use each time its picked up.

  • This modified Santoku is a “jack of all trades” for the cook. You can pierce, slice, chop and rock, making food prep a one knife mission. The thin flat ground VG10 Damascus is renowned for taking a razor edge and its ability to resist rust. 
  • The stabilized wood or micarta slabs match the design profile. This lends to a great natural contour that nests comfortably in your hand.
  • The sheath matches the handle in either Bog Oak or Natural Micarta

Jens Anso has been building knives in Denmark since 1988. In their current iteration, Jens’ knives and accessories are industrial products with highly technical designs and expert refinement. Known for his asymmetric blades, precise machining and rich anodizing, Jens is a coveted knifemaker with an international following.
